Tales of Woe; or, How I Missed National Peanut Butter Day

Tuesday was National Peanut Butter Day, but it was also National Meeting Day at work and National Girl’s Night and Wine Drinking Day at my friend’s apartment, so somehow I missed it. I MISSED NATIONAL PEANUT BUTTER DAY. Man, I love peanut butter! It’s so great, it’s one of the best foods to ever exist (unless you’re allergic, in which case, I’m so sorry – you are missing out).


What are some things I love about peanut butter, you ask? Well, allow me to answer:

  1. You can eat it with a spoon straight out of the jar and it’s awesome.
  2. So many choices! You can choose smooth, chunky, salted, unsalted (weirdo), all-natural (choose this one), all-unnatural, etc.
  3. You can dip so many things in it. Apples, crackers, chocolate bars.
  4. It’s not low-calorie, but it’s satisfying and nutritious (if you’re buying the right kind).
  5. It reminds you of being a kid.

I’m pretty bummed I missed it, but technically I celebrated without even knowing it by eating peanut butter toast with raisins for breakfast. Really, you can celebrate National Peanut Butter Day every day of the week if you’re lucky.

Five Things: Friday Food Lust

Oh, hey boys and girls. It’s time for a new segment I like to call Friday Food Lust. Expect photos of delicious things I ate this week and explanations of how you can eat these delicious things too. I’m going to invest in a nice camera soon, but for now you’ll have to deal with my iPhone photos. Without further ado, here are five photos of delicious things!

 

1. Multigrain Toast with Peanut Butter and Raisins (and Apple Slices)

Sometimes I eat like a toddler.

 

 

 

 

 

 

 

 

As if you needed further proof of my immaturity, look no further than putting raisins and peanut butter on multigrain toast and pairing it with apple slices. I also love Ants on a Log (celery sticks with peanut butter and raisins, duh).

 

2. Dessert Crepe

Crepe and berries and syrup, oh my!

 

 

 

 

 

 

 

 

Contrary to what it may look like, I did not take a photo of this crepe in a German sex dungeon. I ate this crepe at Tapeo in celebration of National Dessert Day last Friday! It was good. I’m pretty sure the syrup was just Hershey’s, but I happen to love Hershey’s syrup, so I was happy.

 

3. Drizzled Black & White Kettlecorn from Popcorn, Indiana

POPCORN WITH CHOCOLATE. AH MAH GAH.

 

 

 

 

 

 

 

 

This stuff changed my life. It’s indescribably delicious. It tastes like happiness and sunshine. Go buy it.

 

4 and 5. Amy’s Roasted Vegetable Pizza and Roasted Asparagus and Baby Bella Mushrooms

Simple, healthy, delicious.

 

 

 

 

 

 

 

 

This was one satisfying meal.

 

 

 

 

 

 

 

 

I was pretty pleased with this one. I highly recommend the pizza – no hard-to-pronounce ingredients and even though it’s dairy-free, it should satisfy your pizza tooth.

The roasted veggies were super simple.

Roasted Asparagus and Baby Bella Mushrooms

One bunch fresh asparagus

One package baby bella mushrooms

Rosemary olive oil (amount depends on your preference, I probably used about 1 1/2 TBSP)

Two large garlic cloves, peeled and minced

Freshly ground salt and pepper to taste

 

Preheat oven to 400°F.

Trim asparagus stems. Place asparagus and mushrooms into large glass baking dish. You should have one layer of veggies, try to avoid too much overlap.

Add oil, minced garlic, and salt and pepper. Coat evenly.

Roast for about 10 minutes. Voila!

I paired all this with a Sam Adams Harvest Pumpkin Ale, because it’s fall and pumpkin beer is a seasonal requirement.

A Love Letter to Avocado

Dear Avocado,

I regret that I met you only recently – the years I spent without you would have been that much more joyful with your presence. I am especially anguished to admit that I hated you at first. I thought that you were weak, useless, fat, and plagued with unfortunate skin issues, not unlike a 14-year-old videogame nerd. As far as I was concerned, you weren’t even worthy of joining me for lunch.

Does my brutal honesty offend? So be it, I must tell my truth! And while our relationship may have started off on the wrong foot, my truth is this: I love you, avocado. I love you more than Michele Bachmann loves corndogs. I love you more than Sandra Lee loves Kwanzaa cake.  I love you more than Sammi and Deena from the Jersey Shore love 6 Hour Power Energy Shots. That is to say, a lot.

I’m sorry for any hurt that my years of rejection may have caused. I recognize that your tough exterior is only there to shield your soft and delicate interior from the inequality and misunderstandings plaguing this world. You offer me nourishment when I need it most and you never fail to impress when I take you to dinner parties. I would be proud to introduce you to my mother.

Now I know it’s not easy bein’ green. But avocado, never change.

By the way, here are Five Things You Should Know About Avocados:

  1. They are really, really good for you. They get knocked for having a lot of fat, but it’s the magical “good” kind. That fat is precisely why avocados are so anti-inflammatory and why they help our bodies absorb nutrients. Fat is not the enemy, so eat your guacamole.
  2. Here is a nice tutorial on how to cut and peel an avocado from Simply Recipes. It’s easy once you get the hang of it.
  3. Avocados brown easy. If you only want to use half an avocado, save the side with the pit and sprinkle the exposed surface with lemon juice. Wrap it up tight in cling wrap and put it in the fridge so you can use it the next day. A little browning won’t kill you, by the way.
  4. Tip from me to you: Nothing makes a grilled cheese better than adding thin slices of avocado.
  5. You should try and make this and I will too. I will add feta.
